  • Yield: 2530 bites 1x
  • Diet: Vegetarian

Description

These White Chocolate Strawberry Cheesecake Bites are the ultimate no-bake dessert — creamy, fruity, and coated in luscious strawberry-tinted white chocolate. Ready in just 2 hours, they’re elegant, bite-sized, and perfect for parties or special occasions.

Ingredients

Scale
  • 8 oz (225g) cream cheese, softened
  • 8 oz (225g) white chocolate chips, divided
  • 1 tsp pure vanilla extract
  • 1/4 cup granulated sugar (optional)
  • 16 oz (450g) white chocolate chips or almond bark (for coating)
  • 1 tsp freeze-dried strawberry powder or pink gel coloring
  • 1/2 cup graham cracker crumbs (for topping)
  • Fresh strawberry slices (for garnish)
  • White chocolate drizzle (optional)
  • Festive sprinkles (optional)

Instructions

  1. Whip softened cream cheese in a large bowl or stand mixer until smooth and fluffy.
  2. Melt 8 oz white chocolate using a double boiler and add to the cream cheese with vanilla extract. Mix until fully combined.
  3. Cover and freeze mixture for 30 minutes until firm enough to roll.
  4. Scoop and roll into 1-inch balls and place on a parchment-lined tray.
  5. Freeze again for 30–60 minutes until solid.
  6. Melt 16 oz white chocolate for coating, stir in strawberry powder or pink gel coloring until desired color is reached.
  7. Dip each frozen ball into melted chocolate using a toothpick or fork. Let excess drip off, then place back on tray and smooth hole with a bit of chocolate.
  8. Sprinkle graham cracker crumbs on top while coating is still wet.
  9. Freeze for 30–60 minutes or refrigerate for 1–2 hours until fully set.
  10. Let bites rest 10 minutes before serving for the perfect creamy texture.

Notes

Store cheesecake bites in an airtight container in the refrigerator for up to 5 days or freeze up to 2 months. Thaw at room temperature for 10–15 minutes before serving. For healthier options, use Greek yogurt cream cheese or sugar-free white chocolate. Always ensure bites are fully frozen before dipping to prevent melting.
