- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour

- 1/4 teaspoon baking powder
- 1/2 cup mini chocolate chips (optional)
- 1 cup shredded coconut
- 1/2 cup marshmallow fluff or mini marshmallows
- 1/2 cup heavy cream
- 1 tablespoon butter
- 1/4 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F and line an 8×8-inch baking pan.
- Mix melted butter and sugar until smooth.
- Whisk in eggs and vanilla extract.
- Add cocoa powder, flour, salt, and baking powder and mix until just combined.
- Fold in chocolate chips if using.
- Spread batter evenly into prepared pan.
- Bake for 20–25 minutes until a toothpick has moist crumbs.
- Cool brownies completely.
- Heat heavy cream, butter, and vanilla in a saucepan until melted.
- Stir in marshmallow fluff until smooth.
- Spread marshmallow mixture over cooled brownies.
- Sprinkle shredded coconut evenly on top and gently press.
- Refrigerate for 30 minutes, then slice and serve.
Notes
Allow brownies to cool fully before adding topping to prevent melting. Store leftovers refrigerated for best texture.
