  • Salt and pepper to taste
  • 1/3 cup ketchup
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 tablespoon sriracha
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 2 teaspoons rice vinegar
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Sliced green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Place chicken thighs in the slow cooker and season with salt and pepper.
  2. In a bowl, whisk together ketchup, honey, soy sauce, sriracha, sesame oil, garlic, and ginger.
  3. Pour sauce evenly over chicken thighs.
  4. Cover and cook on low for 3–4 hours until chicken reaches 165°F.
  5. Remove chicken and keep warm.
  6. Transfer cooking liquid to a saucepan and add rice vinegar.
  7. Bring sauce to a simmer over medium heat.
  8. Whisk cornstarch with water and stir into sauce.
  9. Simmer until thickened, about 1 minute.
  10. Pour sauce over chicken and garnish with green onions and sesame seeds.

Notes

Chicken thighs remain moist and tender when slow cooked. Thicken the sauce separately for a glossy, restaurant-style finish.
