- 1 lb large shrimp, peeled and deveined
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 2 cups green cabbage, shredded
- 1 cup carrots, julienned
- 3 tablespoons mayonnaise
- 1 tablespoon fresh lime juice
- 2 tablespoons fresh cilantro, chopped
- Salt to taste
- 8 corn tortillas
- Ripe avocado slices
- 1/3 cup Cotija cheese, crumbled
- Fresh lime wedges
- Hot sauce
Instructions
- Pat shrimp dry. Mix chili powder, cumin, paprika, garlic powder, salt, pepper, olive oil, and lime juice. Toss shrimp and marinate 10 minutes.
- Mix mayonnaise, lime juice, and cilantro. Add cabbage and carrots; toss and season with salt.
- Heat a skillet over medium-high. Add shrimp in a single layer and cook 2–3 minutes per side until opaque.
- Warm tortillas in a skillet or microwave until soft and pliable.
- Assemble tacos with slaw, shrimp, avocado, Cotija, and lime wedges.
Notes
Avoid overcooking shrimp—they become rubbery fast. Remove from heat as soon as opaque.
