- 1 fresh pineapple, peeled and sliced
- 2 cups granulated sugar
- 1 cup apple cider vinegar
- 1 tbsp crushed red pepper flakes
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp salt
Instructions
- Peel the pineapple and slice into 1/2-inch rings or chunks. Set aside.
- In a large pot, combine sugar, apple cider vinegar, red pepper flakes, cinnamon, ginger, and salt.
- Bring the mixture to a boil over medium heat, stirring until sugar dissolves.
- Add pineapple pieces and reduce heat to a simmer.
- Cook for 10–15 minutes until pineapple is tender and translucent.
- Remove from heat and let cool slightly.
- Spoon pineapple and syrup into sterilized jars and seal.
- Cool completely before refrigerating or processing for long-term storage.
Notes
Adjust red pepper flakes to control heat. Use ripe pineapple for best flavor and texture.
