- 3/4 cup granulated sugar
- 2 tbsp cornstarch
- 1 tbsp fresh lemon juice

- 1/4 tsp ground nutmeg
- Pinch of salt
- For the Cobbler Topping:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 6 tbsp cold unsalted butter, cubed
- 1/2 cup whole milk
- 1 large egg, beaten
- 1 tbsp turbinado sugar (optional, for sprinkling)
Instructions
- Preheat oven to 375°F (190°C) and butter a 9×13-inch baking dish.
- Blanch peaches in boiling water for 30–45 seconds, then transfer to ice water and peel. Slice into 1/4-inch wedges.
- In a large bowl, mix peaches with sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, and salt. Let sit 10 minutes.
- In another bowl, whisk flour, sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Add milk and beaten egg to the flour mixture. Stir gently just until combined – batter should be slightly lumpy.
- Pour peach filling into prepared dish and spoon batter over peaches, leaving some fruit exposed. Sprinkle turbinado sugar if using.
- Bake for 35–40 minutes until topping is golden and filling is bubbling. Let cool for 10 minutes before serving.
