Ingredients

Scale
  • 4 boneless, skinless chicken breasts (pounded to even thickness)
  • 1 tablespoon olive oil or melted butter
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Optional: 1/4 teaspoon dried thyme or oregano

Instructions

  1. Optional: Brine the chicken breasts in a saltwater solution for 15–30 minutes. Rinse and pat dry.
  2. Preheat the oven to 425°F (220°C).
  3. Brush chicken breasts with olive oil or butter. Mix seasonings and rub over both sides of the chicken.
  4. Place chicken in a single layer on a baking dish or parchment-lined sheet. Bake for 18–25 minutes until internal temp reaches 160°F (71°C).
  5. Let rest under foil for 5–10 minutes to reach 165°F (75°C) and retain juices.

Notes

For best results, brine the chicken before cooking. Always use a meat thermometer to avoid overcooking.
