Ingredients

  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp scallions, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 cup panko breadcrumbs
  • 1 large egg
  • 3 tbsp gochujang
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 cup mayonnaise
  • 1 tbsp sriracha
  • 1 tbsp lime juice

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine ground meat, garlic, ginger, scallions, soy sauce, sesame oil, panko, and egg. Mix gently.
  3. Form 1-inch meatballs and place on the baking sheet.
  4. Bake for 18–20 minutes until cooked through.
  5. Simmer gochujang, brown sugar, and rice vinegar in a saucepan for 3–4 minutes to form glaze.
  6. Toss cooked meatballs in the glaze until evenly coated.
  7. Whisk together mayonnaise, sriracha, and lime juice for the spicy dip.
  8. Serve meatballs with spicy mayo and garnish with scallions and sesame seeds.
