Ingredients
Scale
- 1 cup vegetable oil
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup quick oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 2 cups grated zucchini (well-drained)
- 1 package (8 oz) cream cheese, softened
- 3 tablespoons butter
- 2 1/2 cups confectioners’ sugar
- 1 teaspoon vanilla flavoring
Instructions
- Preheat oven to 350°F (175°C) and grease a 10.5 x 15.5-inch jelly roll pan or line with parchment paper.
- In a large bowl, whisk together vegetable oil, granulated sugar, brown sugar, eggs, and vanilla until smooth.
- Add flour, oats, baking powder, salt, and cinnamon. Gently mix until just combined.
- Fold in grated zucchini and spread batter evenly in prepared pan.
- Bake for 18–22 minutes, or until a toothpick inserted in the center comes out with moist crumbs. Let cool completely.
- For frosting, beat cream cheese and butter until fluffy. Gradually add confectioners’ sugar and vanilla, beating until smooth.
- Spread frosting over cooled bars, cut into squares, and serve.
Notes
Ensure zucchini is well-drained to prevent soggy texture. Avoid overmixing batter for tender results. Always cool bars completely before frosting.
