Ingredients

- 2 cups filtered water
- 2 tablespoons organic ginger (unpeeled, finely chopped)
- 2 tablespoons organic cane sugar
- Additional 1 teaspoon sugar and 1 tablespoon ginger daily for feeding
Instructions
Prepare the Starter:
- In a clean glass jar, combine 2 cups of filtered water, 2 tablespoons of chopped organic ginger, and 2 tablespoons of sugar.
- Stir well until the sugar dissolves.
Cover and Ferment:
- Cover the jar with cheesecloth or a coffee filter and secure it with a rubber band.
- Store at room temperature (72-80°F) away from direct sunlight.
Daily Feeding:
- Each day, for 5-7 days, add 1 teaspoon of sugar and 1 tablespoon of chopped ginger.
- Stir gently to keep the mixture aerated.
Check for Readiness:
- By day 3-6, you should see bubbles forming, indicating fermentation.
- A yeasty, slightly sour aroma means it’s ready for use.
Storage and Maintenance:
- Keep the ginger bug in the fridge and feed it once a week with sugar and ginger to maintain activity.
- To reactivate for use, bring it to room temperature and feed for 1-2 days.

- Use only organic ginger to ensure the presence of natural microbes.
- Filtered, non-chlorinated water is essential for successful fermentation.
- If no bubbles appear after 7 days, start fresh with new ginger and sugar.
