- 2 cod fillets (6–8 oz each)
- 2 tablespoons extra virgin olive oil
- 3 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon red chili flakes
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
Instructions
- Pat cod fillets dry and season both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high until shimmering.
- Sear cod, presentation side down, for 3–4 minutes without moving.
- Flip and cook another 3 minutes until fish flakes and reaches 145°F.
- Transfer cod to a warm plate and tent with foil.
- Reduce heat and add butter to the skillet. Add garlic and cook 1 minute.
- Stir in parsley and chili flakes; cook 30 seconds.
- Return cod to skillet and spoon garlic butter over fillets before serving.
