  • 1½ cups pomegranate arils (from 1 large pomegranate)
  • 2 Asian pears, seeded and chopped
  • 3 persimmons, chopped
  • 4 mandarin oranges, peeled and segmented
  • 1 large Honeycrisp apple, seeded and chopped
  • 1 tbsp liquid honey, plus extra for drizzling
  • 12 tbsp fresh lemon juice
  • Fresh mint leaves for garnish
  • Cream cheese fruit dip for serving (optional)

Instructions

  1. Prepare Pomegranate: Cut in half, submerge in water, and tap the back to release arils. Drain and set aside.
  2. Chop Pears: Seed and chop pears into ½-inch pieces. Toss with lemon juice to prevent browning.
  3. Prepare Persimmons: Wash, remove tops, and chop into ½-inch pieces.
  4. Segment Mandarins: Peel and separate mandarin segments, removing white pith.
  5. Chop Apple: Core and chop apple; toss immediately with lemon juice to keep color bright.
  6. Combine Fruit: Gently mix all prepared fruit in a large bowl using a silicone spatula.
  7. Make Syrup: In a small bowl, whisk honey and lemon juice until smooth.
  8. Dress the Fruit: Drizzle the honey-lemon syrup over fruit and gently toss to coat evenly.
  9. Garnish & Serve: Transfer to serving bowl, drizzle with extra honey, and garnish with fresh mint leaves. Chill up to 30 minutes before serving.

Notes

Use crisp, ripe fruits for best texture. Toss apples and pears with lemon juice immediately to prevent browning. Add pomegranate arils just before serving for maximum color and freshness.
