A quick and healthy chocolate pudding made with blended cottage cheese, packed with protein and perfect for an easy no-bake dessert.
Ingredients

- 2 cups cottage cheese
- 2 scoops protein powder (peanut butter, chocolate, or vanilla)
- 3 tablespoons unsweetened cocoa powder
- 1 1/2 tablespoons powdered erythritol or stevia, to taste
- 1 teaspoon vanilla extract
- 2–4 tablespoons unsweetened almond milk
- Pinch of salt (optional)
- Fresh berries, dark chocolate shavings, or chopped nuts for topping
Instructions
- Add cottage cheese, protein powder, cocoa powder, sweetener, vanilla extract, almond milk, and salt to a blender or food processor.
- Blend until completely smooth and creamy, scraping down the sides as needed.
- Taste and adjust sweetness or thickness by adding more sweetener or almond milk.
- Spoon the pudding into serving bowls or jars.
- Refrigerate for 30 minutes to thicken, if desired.
- Add toppings before serving.
