A rich and comforting one-pot soup that combines creamy Alfredo flavors with tender chicken and broken lasagna noodles for an easy, cozy meal.

- 1 pound chicken breast
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon lemon pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons unsalted butter
- 1 tablespoon minced garlic
- 4 cups chicken broth
- 1 1/2 cups half and half or heavy cream
- 1 1/2 cups whole milk
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Dash of nutmeg
- Dash of dried mustard
- Dash of cayenne pepper
- 8–9 ounces lasagna sheets, broken into pieces
- 2 tablespoons fresh parsley, chopped
- 1/4–1/3 cup grated parmesan cheese
- 1/3 cup shredded mozzarella cheese
- 2 tablespoons fresh basil, chopped
- 1–2 tablespoons all-purpose flour (optional)
Instructions
- Mix olive oil, Italian seasoning, lemon pepper, smoked paprika, garlic powder, salt, and black pepper. Coat chicken evenly.
- Heat oil in a large pot over medium heat and cook chicken 5–6 minutes per side until cooked through. Remove and chop.
- In the same pot, melt butter and sauté garlic for 1 minute.
- Add chicken broth, cream, milk, Italian seasoning, oregano, salt, pepper, nutmeg, mustard, and cayenne. Bring to a gentle simmer.
- Add broken lasagna noodles and cook 12–14 minutes, stirring occasionally.
- Return chicken to the pot and stir in parmesan, mozzarella, parsley, and basil.
- Simmer until creamy and well combined. Adjust seasoning as needed.
- If thicker soup is desired, whisk flour with a little broth and stir back into soup.
- Serve hot with extra cheese and fresh herbs.
Notes
Stir the pasta often to prevent sticking. Add extra broth or milk when reheating to maintain a creamy consistency.
