Description

Cherry Chocolate Sourdough Bread is a naturally fermented artisan loaf combining tangy sourdough, juicy cherries, and rich chocolate chips for a sweet, flavorful bread perfect for breakfast, snacks, or dessert.


Ingredients

Scale
  • 19 g sourdough starter (100% hydration)
  • 40 g bread flour
  • 10 g rye flour
  • 50 g water
  • 420 g bread flour
  • 30 g rye flour
  • 100 g levain
  • 330 g water (divided)
  • 130 g cherries, pitted and chopped
  • 75 g semi-sweet chocolate chips
  • 9 g salt

Instructions

  1. Mix sourdough starter, water, bread flour, and rye flour to make the levain and let ferment until doubled.
  2. Combine bread flour, rye flour, and most of the water, then rest for autolyse.
  3. Add levain, salt, and remaining water and mix until cohesive.
  4. Perform stretch and folds every hour for two hours.
  5. Laminate the dough and evenly add cherries and chocolate chips.
  6. Perform coil folds and allow dough to strengthen.
  7. Shape the dough and place in a proofing basket.
  8. Cold proof in the refrigerator overnight.
  9. Score and bake in a preheated Dutch oven until golden and caramelized.
  10. Cool completely before slicing.

Notes

Allow the bread to cool fully before slicing to preserve crumb structure.
