- 1 tablespoon olive oil
- 1 pound Italian sausage (or turkey sausage)
- 3 cloves garlic, minced
- 1 medium sweet onion, diced
- 2 teaspoons Italian seasoning
- 4 cups chicken stock (or vegetable stock)
- 1 (9-ounce) package cheese tortellini
- ½ bunch kale, chopped (or spinach)
- ⅓ cup heavy cream (or half-and-half/coconut milk)
- Optional: ½ cup tomato sauce for tangy depth
Instructions
- Heat olive oil in a large stockpot over medium heat. Brown sausage until fully cooked.
- Add garlic, onion, and Italian seasoning. Sauté 3-5 minutes until onion is translucent.
- Whisk in 1 tbsp flour and cook 1 minute for roux base.
- Pour in chicken stock (and tomato sauce if using). Bring to boil.
- Stir in tortellini and cook 5-7 minutes until tender.
- Add kale and cook 2-3 minutes until wilted.
- Stir in heavy cream. Adjust salt and pepper. Serve with fresh basil or Parmesan.
Notes
Do not overcook tortellini. Add cream at the end to prevent curdling. Freeze without cream and add fresh cream when reheating for best texture.
