Liquid & Seasonings:

  • 4 cups chicken broth
  • Zest of 1 lime plus juice of ½ lime
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp dried oregano

Creamy Element:

  • 48oz cream cheese, softened

Instructions

  1. Brown ground beef in Dutch oven over medium-high heat until cooked through, about 6–8 minutes. Drain excess fat, leaving 1 tbsp.
  2. Add onion and garlic, sauté 2–3 minutes until fragrant.
  3. Stir in jalapeño, Anaheim pepper, and 1 packet taco seasoning. Cook 1 minute to bloom flavors.
  4. Add chicken broth, beans, tomatoes, corn, lime zest, lime juice, salt, pepper, and oregano. Bring to a gentle boil.
  5. Taste and adjust seasonings, adding more taco seasoning if desired.
  6. Reduce heat to medium. Stir in softened cream cheese until smooth and fully melted, 3–4 minutes.
  7. Simmer covered for 10 minutes to let flavors meld. Serve hot with toppings like cilantro, shredded cheese, sour cream, or avocado.

Notes

Use softened cream cheese to avoid lumps. Start with 1 packet of taco seasoning and adjust to taste. Drain and rinse canned beans and corn to reduce sodium and prevent thin broth.
