- 4 cups chicken or vegetable broth
- 1 cup milk
- Salt and black pepper to taste
- Fresh thyme for garnish
Instructions
- Heat butter and olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes. Stir in garlic and sauté 1 minute.
- Add mushrooms and cook 8–10 minutes until golden brown and caramelized.
- Sprinkle flour over mushroom mixture, stirring constantly for 1 minute.
- Gradually pour in broth while stirring to avoid lumps. Bring to a simmer.
- Reduce heat and stir in milk. Simmer 5 minutes until thickened. Season with salt and pepper.
- Ladle into bowls, garnish with thyme, and serve hot.
