- 1/4 tsp red pepper flakes (optional)
- 1 tbsp tomato paste
- 1 large sweet potato, peeled and cubed (about 2 cups)
- 8 oz refrigerated three-cheese tortellini
- 4 oz fresh baby spinach (or kale/chard)
- 1/2 cup heavy cream (or half-and-half)
- 4 tbsp fresh thyme leaves (or 2 tsp dried thyme)
Instructions
- Heat olive oil in a large pot. Add sausage, cook 6-8 minutes until browned. Drain excess grease, leaving 1 tbsp.
- Stir in Italian seasoning and paprika, cooking 1 minute to bloom flavors.
- Add sweet potato, garlic, red pepper flakes, and tomato paste. Cook 2-3 minutes until fragrant.
- Pour in water, scraping bottom to release fond. Bring to boil, then simmer 15 minutes until potatoes are tender.
- Add tortellini. Cover and cook 10 minutes until tender.
- Stir in spinach and cook until wilted, 30-60 seconds.
- Remove from heat. Stir in heavy cream until smooth and creamy.
- Adjust seasoning with salt and pepper. Garnish with fresh thyme.
Notes
Cook tortellini just until tender to prevent mushiness. Always add cream off heat to avoid curdling. Brown sausage thoroughly for the best flavor.
