Ingredients
2 tbsp butter
1 tbsp olive oil
1 small yellow onion, diced
1 cup carrots, shredded
1/2 cup celery, diced
3 cloves garlic, minced
1/4 cup all-purpose flour
4 cups chicken broth
1 cup half-and-half or heavy cream
1 cup milk
1 tsp Italian seasoning
1/2 tsp salt (adjust to taste)
1/2 tsp black pepper
2 cups cooked, shredded chicken (rotisserie works well)
1 lb potato gnocchi
2 cups fresh spinach, chopped
1/2 cup grated Parmesan cheese (optional)
Fresh parsley, for garnish
Instructions
Sauté the Vegetables: In a large pot over medium heat, melt butter with olive oil. Add diced onion, carrots, and celery. Sauté for about 5 minutes until vegetables are softened. Stir in the minced garlic and cook for an additional minute.
Make the Roux: Sprinkle the flour over the vegetables and stir continuously for about 2 minutes to create a roux. This helps thicken the soup.
Simmer the Broth: Slowly pour in the chicken broth while stirring to prevent lumps. Add the half-and-half, milk, Italian seasoning, salt, and black pepper. Bring to a gentle simmer.
Cook the Gnocchi: Add the shredded chicken and gnocchi to the pot. Simmer for 5-7 minutes until the gnocchi float to the surface and are tender.
Final Touches: Stir in the fresh spinach and allow it to wilt for about a minute. If using, add Parmesan cheese for extra creaminess.
Serve: Ladle the soup into bowls, garnish with fresh parsley and extra Parmesan if desired. Serve warm and enjoy!
Notes
For extra flavor, use rotisserie chicken or add a splash of white wine while sautéing the vegetables.
Substitute kale for spinach for a heartier texture.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
If reheating, add a splash of broth or milk to maintain the creamy consistency.
