Description

This vibrant Christmas jam combines strawberries, cranberries, citrus, and warm spices into a jewel-toned preserve that’s perfect for gifting, brunching, or spreading holiday cheer.

  • 40 ounces frozen unsweetened strawberries, crushed
  • 1 pound fresh cranberries
  • Zest from 2 oranges (about 2 tablespoons)
  • ¼ cup bottled lemon juice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • 5 pounds granulated sugar
  • 2 (3-ounce) pouches liquid fruit pectin

Instructions

  1. Wash jars, lids, and bands in hot soapy water. Rinse well and keep jars warm. Simmer water in a water bath canner and set up all your tools.
  2. In a large saucepan, combine crushed strawberries, cranberries, lemon juice, orange zest, cinnamon, and cloves. Stir until evenly combined.
  3. Add all the sugar and both pectin pouches. Stir thoroughly. Bring mixture to a full rolling boil that cannot be stirred down. Boil for exactly 1 minute, stirring constantly.
  4. Remove from heat. Skim off foam with a metal spoon for a clear finish.
  5. Ladle jam into warm jars, leaving ¼-inch headspace. Remove bubbles, wipe rims clean, and apply lids and bands to fingertip tightness.
  6. Place jars in water bath canner with at least 1 inch of water above them. Cover and boil gently for 10 minutes (adjust for altitude).
  7. Turn off heat and let jars rest in canner for 5 minutes. Then transfer to towel-lined counter and let cool undisturbed for 12–24 hours.
  8. Check seals by pressing jar lids. Label and store sealed jars in a cool, dark place. Refrigerate any unsealed jars and use within 3 weeks.

Notes

Use a candy thermometer to ensure the mixture reaches 220°F for proper gel. Do not double the batch—make in separate batches for consistent results. Let jam sit 24 hours before testing consistency.
