- 3 cups cooked and cooled jasmine rice
- 2 tbsp vegetable oil
- 2 eggs, beaten
- ½ cup diced carrots
- ½ cup peas
- ½ cup diced onion
- 2 cloves garlic, minced
- ½ lb cooked chicken, shrimp, or tofu (optional)
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- ½ tsp white pepper
- 2 green onions, chopped
Instructions
- Prepare the ingredients: Ensure the rice is fully cooled to prevent clumping. Dice all vegetables and prepare protein.
- Cook the eggs: Heat 1 tbsp oil in a large wok or pan. Scramble the eggs, then remove and set aside.
- Sauté aromatics: Add the remaining oil, then sauté the onions, garlic, and carrots for 2 minutes.
- Add protein and rice: Stir in your choice of protein and cooked rice. Toss well.
- Season: Pour in soy sauce, oyster sauce, white pepper, and sesame oil. Stir fry for 2-3 minutes.
- Finish: Mix in the peas, scrambled eggs, and green onions. Stir well and serve hot.

- Use day-old rice for the best texture.
- Adjust soy sauce for saltiness as needed.
