- 3 cups frozen hash browns, thawed slightly (about 8 oz)
- 2–3 cups cooked chicken, cut into bite-sized pieces
- 1/4 cup bacon bits
- 1 cup sharp cheddar cheese, shredded
- 10.5 oz can condensed cream of chicken soup
- 1/2 cup whole milk
- 12 oz frozen mixed vegetables, thawed slightly
- 1/8 tsp dried thyme
- 12–14 Ritz crackers, crushed
- 1/2 cup sharp cheddar cheese, shredded (for topping)
Instructions
- Preheat oven to 400°F. Lightly grease a 7×11-inch baking dish.
- In a large bowl, mix thawed hash browns, chicken, bacon bits, 1 cup cheddar cheese, mixed vegetables, cream of chicken soup, milk, and thyme.
- Spread mixture evenly in baking dish.
- Crush Ritz crackers and combine with remaining 1/2 cup cheese. Sprinkle over top.
- Cover with foil and bake 30 minutes.
- Uncover and bake another 15 minutes until top is golden brown.
- Rest 10-15 minutes before serving for best consistency.
Notes
Use rotisserie chicken for convenience. Swap in Greek yogurt for half the milk, turkey bacon for bacon bits, or broccoli for mixed vegetables. Always shred cheese fresh for best melting quality.
