  • ½ cup granulated sugar
  • ¼ cup all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest (optional)
  • 6 tablespoons all-purpose flour
  • ½ cup old-fashioned rolled oats
  • ½ cup packed light brown sugar
  • 4 tablespoons unsalted butter, cold and cut into small pieces
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cardamom (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Pit the cherries and toss with sugar, flour, lemon juice, and zest.
  2. In a separate bowl, combine flour, oats, brown sugar, cinnamon, cardamom, and salt. Cut in butter until mixture resembles coarse crumbs.
  3. Pour cherry mixture into a greased 1.5-quart baking dish. Sprinkle topping evenly over the surface.
  4. Bake for 40–45 minutes, rotating halfway through, until topping is golden brown and filling is bubbling.
  5. Cool for 10 minutes before serving. Serve with vanilla ice cream or whipped cream if desired.

Notes

Use oat flour and vegan butter for gluten-free or dairy-free versions. Add chopped nuts for extra crunch. For a flavor boost, add almond extract or amaretto to the filling.
