- 5 cups fresh sweet cherries, pitted and halved (about 2 ½ lbs)
- ½ cup granulated sugar
- ¼ cup all-purpose flour
- 1 tablespoon fresh lemon juice
- 1 tablespoon lemon zest (optional)
- 6 tablespoons all-purpose flour
- ½ cup old-fashioned rolled oats
- ½ cup packed light brown sugar
- 4 tablespoons unsalted butter, cold and cut into small pieces
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cardamom (optional)
- Pinch of salt
Instructions
- Preheat your oven to 375°F (190°C). Pit the cherries and toss with sugar, flour, lemon juice, and zest.
- In a separate bowl, combine flour, oats, brown sugar, cinnamon, cardamom, and salt. Cut in butter until mixture resembles coarse crumbs.
- Pour cherry mixture into a greased 1.5-quart baking dish. Sprinkle topping evenly over the surface.
- Bake for 40–45 minutes, rotating halfway through, until topping is golden brown and filling is bubbling.
- Cool for 10 minutes before serving. Serve with vanilla ice cream or whipped cream if desired.
Notes
Use oat flour and vegan butter for gluten-free or dairy-free versions. Add chopped nuts for extra crunch. For a flavor boost, add almond extract or amaretto to the filling.
