Ingredients
1 lb ground beef (can substitute with ground turkey or chicken)
12 oz egg noodles (or any pasta of your choice, such as penne or rotini)
1 onion, chopped
2 cloves garlic, minced
2 tbsp butter
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream (can substitute with Greek yogurt for a healthier version)
1 cup beef broth (or chicken broth)
1 tsp Dijon mustard
1 tsp paprika
Salt and pepper to taste
2 cups shredded cheddar cheese (or a dairy-free cheese alternative)
1/2 cup grated Parmesan cheese (optional)
Instructions
Preheat the Oven: Preheat your oven to 375°F (190°C).
Brown the Beef: In a large skillet, melt the butter over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Once the beef is fully cooked, drain any excess fat.
Sauté the Vegetables: Add the chopped onion and minced garlic to the skillet and cook for 3 minutes, until the onions are soft and fragrant.
Make the Sauce: Stir in the cream of mushroom soup, beef broth, sour cream, Dijon mustard, and paprika. Mix until smooth and cook for an additional 5 minutes. Season with salt and pepper to taste.
Cook the Pasta: Meanwhile, cook the egg noodles according to the package instructions until al dente. Drain and set aside.
Combine and Assemble: In a large mixing bowl, combine the cooked pasta with the beef mixture, ensuring the noodles are well coated. Pour everything into a greased 9×13-inch baking dish.
Top with Cheese: Sprinkle the shredded cheddar cheese evenly over the casserole. Add the grated Parmesan cheese on top if desired.
Bake: Place the casserole in the preheated oven and bake for 25-30 minutes or until the cheese is melted and bubbly. For a crispier top, broil for an additional 1-2 minutes.
Serve: Allow the casserole to cool for a few minutes before serving. Enjoy this cheesy, creamy comfort food!
Notes
You can prepare this casserole ahead of time and refrigerate it overnight. Just bake it the next day for a convenient meal.
Feel free to add extra vegetables like mushrooms or bell peppers to the beef mixture for additional flavor.
For a lighter version, opt for lean ground beef, Greek yogurt instead of sour cream, and low-fat cheese.
