  • 4 boneless, skinless chicken breasts

  • 8 oz fresh mushrooms, finely chopped

  • 4 oz cream cheese

  • 1 cup shredded mozzarella cheese

  • 2 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 1 tbsp fresh parsley, chopped (optional for garnish)

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • 1 lemon wedge (optional, for garnish)


Instructions

  • Prepare the Chicken Breasts:

    • Place the chicken breasts on a clean cutting board. Using a sharp knife, slice each chicken breast horizontally to create a pocket for the stuffing. Season the chicken breasts with salt and pepper on both sides.

  • Make the Garlic Butter Mushroom Filling:

    • In a medium pan, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushrooms and sauté for about 5 minutes until they soften. Add the minced garlic and cook for another 1-2 minutes. Add 2 tablespoons of butter, allowing it to melt and blend with the mushrooms. Stir in cream cheese and mozzarella cheese until melted and combined. Remove from heat and let the mixture cool slightly.

  • Stuff the Chicken:

    • Once the filling has cooled, stuff each chicken breast with the mushroom and cheese mixture. Secure the open edges with toothpicks to hold the stuffing in place.

  • Sear the Chicken:

    • Heat a large skillet over medium-high heat. Add the remaining olive oil and sear the stuffed chicken breasts for 4-5 minutes on each side until golden brown.

  • Bake the Chicken:

    • Preheat your oven to 375°F (190°C). After searing, transfer the skillet to the oven and bake the chicken for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese is bubbly and golden.

 

  • Garnish and Serve:

    • Once the chicken is cooked, remove the toothpicks. Garnish with fresh parsley and a squeeze of lemon juice before serving.
