  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon fresh thyme leaves

  • 1/4 cup water

Instructions

  1. Thinly slice the onions using a sharp knife for even texture.
  2. Heat olive oil in a large skillet over medium heat. Add onions and a pinch of salt. Stir to coat.
  3. Cook onions for about 10 minutes until softened and golden, stirring occasionally.
  4. Reduce heat to low and cook for another 25–30 minutes, stirring frequently, until deeply caramelized.
  5. Add balsamic vinegar and brown sugar. Stir to deglaze the pan and combine flavors.
  6. Pour in water and add thyme. Cook for 5–10 minutes more until thick and jammy.
  7. Season with salt and pepper to taste. Remove from heat.
  8. Let cool slightly before transferring to airtight containers. Store in the refrigerator up to 2 weeks.

Notes

Substitute red onions for a milder flavor, or use honey or maple syrup in place of brown sugar. This jam is freezer-friendly and can be used on cheese boards, burgers, sandwiches, or crostini.
