- 4 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon brown sugar
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 1/4 cup water
Instructions
- Thinly slice the onions using a sharp knife for even texture.
- Heat olive oil in a large skillet over medium heat. Add onions and a pinch of salt. Stir to coat.
- Cook onions for about 10 minutes until softened and golden, stirring occasionally.
- Reduce heat to low and cook for another 25–30 minutes, stirring frequently, until deeply caramelized.
- Add balsamic vinegar and brown sugar. Stir to deglaze the pan and combine flavors.
- Pour in water and add thyme. Cook for 5–10 minutes more until thick and jammy.
- Season with salt and pepper to taste. Remove from heat.
- Let cool slightly before transferring to airtight containers. Store in the refrigerator up to 2 weeks.
Notes
Substitute red onions for a milder flavor, or use honey or maple syrup in place of brown sugar. This jam is freezer-friendly and can be used on cheese boards, burgers, sandwiches, or crostini.
