Ingredients

- 2 tablespoons dried butterfly pea flowers
- 1 tablespoon raw apple cider vinegar (with “the mother”)
- Juice of half a lemon (approximately 1–2 tablespoons)
- 1/2 teaspoon freshly grated ginger
- 1–2 teaspoons raw honey or maple syrup (optional, for sweetness)
- 500ml (about 2 cups) filtered water
Instructions
- Bring 500ml (about 2 cups) of filtered water to a rolling boil in a small saucepan.
- Remove from heat and add 2 tablespoons of dried butterfly pea flowers. Steep for 10 minutes.
- Strain the infusion through a fine-mesh sieve or cheesecloth into a heat-resistant pitcher or bowl.
- While still warm, stir in apple cider vinegar, lemon juice, and grated ginger. Add honey or maple syrup to taste.
- Let cool to room temperature, then refrigerate for at least 30 minutes before serving.
Notes
For a low-sugar version, skip the sweetener or use stevia. For an anti-inflammatory boost, double the ginger and add a pinch of turmeric with black pepper. For a cooling summer drink, serve over ice with lemon and mint garnish.
