- 2 ripe peaches, sliced
- 1 cup crumbled feta cheese
- 4 cups mixed greens (arugula, spinach, romaine)
- 1/4 cup chopped red onion
- 1/4 cup chopped walnuts (toasted optional)
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- 1 tablespoon olive oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Rinse blueberries gently under cold water and pat dry.
- Wash and slice peaches into thin wedges.
- Add mixed greens to a large serving bowl.
- Toss in sliced peaches, blueberries, and crumbled feta cheese.
- Scatter chopped red onion and walnuts on top.
- In a small bowl, whisk honey, balsamic vinegar, olive oil, pepper, and salt until blended.
- Drizzle dressing over the salad and toss gently to coat.
- Taste and adjust seasoning; serve immediately or refrigerate up to 1 hour.
Notes
