- 4 lbs red potatoes, cleaned and cut into chunks
- 1/2 cup water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 tablespoons minced garlic
- 1/4 cup butter, melted
- 2/3 cup sour cream
- 1/2 cup heavy cream, warmed
- 1/2 cup whole milk, warmed
- Fresh chives for garnish
Instructions
- Spray a 6 to 7 quart slow cooker with nonstick spray.
- Add potato chunks and pour water evenly over the top.
- Season with salt and black pepper.
- Add minced garlic and drizzle melted butter over potatoes.
- Cover and cook on high for 4 to 4.5 hours until fork tender.
- Without draining, mash potatoes directly in the slow cooker.
- Add sour cream and heavy cream and mash until combined.
- Use a hand mixer and slowly add milk until desired consistency is reached.
- Taste and adjust seasoning as needed.
- Serve warm topped with chives and additional butter if desired.
Notes
Do not drain the cooking liquid, as it contains starch that helps create a creamy texture. Warm dairy ingredients before adding to prevent lumps.
