  • Yield: 4 servings 1x

Description

Savory Shanghai Fried Noodles made with tender pork, crisp vegetables, chewy noodles, and an umami-rich sauce for an easy, authentic Shanghai-style stir-fry at home.

Ingredients

Scale
  • 8 oz thick noodles (chow mein or lo mein)
  • 1 lb pork, thinly sliced
  • 2 cups cabbage, chopped
  • 1 cup mushrooms, sliced
  • 1 cup green onions, chopped
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons cooking oil

Instructions

  1. Combine sliced pork with soy sauce, garlic, and ginger and marinate for at least 10 minutes.
  2. Cook noodles according to package instructions until al dente, then drain and rinse with cold water.
  3. Heat oil in a wok or large pan over high heat and stir-fry the pork until fully cooked, then remove and set aside.
  4. Add more oil if needed and stir-fry cabbage, mushrooms, and green onions until tender-crisp.
  5. Return pork to the pan, add cooked noodles, and toss everything together until evenly combined.
  6. Adjust seasoning if needed and stir-fry for 2–3 minutes until heated through.
  7. Serve hot, garnished with extra green onions if desired.

Notes

Use high heat to avoid soggy noodles and cook in batches if needed for best texture and flavor.
