- 4 salmon fillets (6 oz each)
- 2 cups fresh baby spinach
- 1 small red onion, thinly sliced
- 1/2 cup chopped sun-dried tomatoes
- 1/3 cup crumbled feta cheese
- 3 tablespoons basil pesto
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- Salt and black pepper to taste
- Lemon juice (optional)
Instructions
- Preheat oven to 400°F and line a sheet pan with parchment paper.
- Heat olive oil in a skillet; sauté red onion and garlic 2–3 minutes.
- Add spinach and cook 1 minute until wilted; remove from heat.
- Pat salmon fillets dry and place on sheet pan; season with salt and pepper.
- Spread 1–2 teaspoons pesto over each fillet.
- Top with spinach mixture, sun-dried tomatoes, and feta.
- Bake 12–15 minutes until salmon reaches 145°F and flakes easily.
- Add lemon juice and rest 3–5 minutes before serving.
Notes
For a golden top, broil the salmon for the final 1–2 minutes. Pat fish dry before seasoning to prevent steaming.
