- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium zucchinis, sliced into half-moons
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
- In a large bowl, combine chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil, then add oregano, basil, paprika, salt, pepper, and red pepper flakes. Toss to coat evenly.
- Transfer mixture to prepared baking dish and spread evenly. Sprinkle with mozzarella and Parmesan cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10–15 minutes, or until cheese is golden and chicken reaches 165°F (75°C).
- Garnish with fresh parsley and serve warm with your choice of side.
Notes
Cut chicken and vegetables to similar sizes for even cooking. Avoid overbaking to keep chicken juicy. Let the bake rest 5 minutes before serving to allow juices to redistribute.
