Ingredients

  • 2 live lobsters (about 1 1/2 lbs each)
  • 4 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 medium carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 4 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1/4 cup all-purpose flour
  • 1/2 cup brandy
  • 4 cups seafood stock
  • 2 cups heavy cream
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper, to taste
  • Fresh chives, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the lobsters for 8 minutes until shells turn red. Remove and let cool.
  2. Crack the shells, extract the lobster meat, chop into bite-sized pieces, and reserve shells separately.
  3. In a large pot, melt butter over medium heat and sauté onion, carrots, celery, and garlic for 5 minutes.
  4. Add the lobster shells and cook for 5 more minutes to release flavor.
  5. Stir in tomato paste and flour and cook for 2 minutes to form a roux.
  6. Deglaze with brandy and simmer for 2 minutes.
  7. Add seafood stock, bring to a boil, reduce heat, and simmer for 30 minutes. Strain and discard solids.
  8. Return liquid to pot, stir in heavy cream, paprika, cayenne, salt, and pepper. Add lobster meat and warm through.

Notes

For a smoother bisque, blend before adding the lobster meat. Adjust cayenne to taste for spice level.
