Ingredients

Scale
  • 3/4 cup cold water
  • 5 tablespoons unflavored gelatin powder
  • 1/2 cup strong brewed green tea
  • 1/3 cup ginger juice
  • 1/4 cup fresh lemon juice
  • Honey, to taste (optional)

Instructions

  1. Pour the cold water into a saucepan and evenly sprinkle the gelatin over the top.
  2. Let the gelatin bloom for 5 minutes.
  3. Brew the green tea strong and measure 1/2 cup.
  4. Add the green tea, ginger juice, and lemon juice to the bloomed gelatin.
  5. Heat gently on low, stirring constantly, until the gelatin is fully dissolved.
  6. Sweeten with honey to taste and stir well.
  7. Pour the mixture into silicone molds or a lightly greased dish.
  8. Refrigerate for at least 2 hours until fully set.
  9. Remove from molds or cut into small squares and serve.

Notes

Do not boil the mixture to preserve nutrients. Adjust ginger and honey levels based on taste preference.
