- 6 boneless skinless chicken thighs
- Kosher salt and freshly ground black pepper
- 1 tablespoon unsalted butter (or olive oil)
- 1 medium shallot, finely diced (about 3 tablespoons)
- 2 cloves garlic, minced
- 1 (12 oz) jar fig preserves
- 2 tablespoons honey
- 3 tablespoons balsamic vinegar
- 5 sprigs fresh thyme (divided, plus more for garnish)
- ½ cup walnuts, chopped (optional, for garnish)
- ½ cup gorgonzola, crumbled (optional, for garnish)
Instructions
- Preheat oven to 425°F (218°C). Lightly spray an 8×8” baking dish with non-stick spray.
- In a saucepan over medium heat, melt butter. Add diced shallots and 1/4 teaspoon salt. Sauté 3–4 minutes until soft. Add garlic and cook 30 seconds to 1 minute until fragrant.
- Stir in fig preserves, honey, balsamic vinegar, and 1 sprig thyme. Bring to boil, then simmer 10–12 minutes until thickened. Remove thyme sprig.
- Pat chicken dry and season with salt and pepper. Place in baking dish and spoon glaze over each thigh. Add remaining thyme sprigs.
- Roast uncovered for 35–40 minutes, basting halfway through. For extra caramelization, broil for last 3–4 minutes, watching carefully.
- Let chicken rest for 5 minutes. Garnish with extra thyme, walnuts, and gorgonzola if using. Serve immediately.
Notes
Use high-quality balsamic for depth. For dairy-free, skip the cheese. Glaze can be blended for a smooth finish. Store leftovers in an airtight container up to 4 days or freeze (without garnish) for up to 2 months.
