Authentic, Spicy, Smothered Green Chili Burritos

Description

Experience bold Southwestern flavor with these smothered green chili burritos, loaded with spicy beef, tender potatoes, and a luscious Hatch chile sauce — comforting, hearty, and perfect for a weeknight dinner.

  • 2 lbs. lean ground beef
  • 1/2 onion, thinly sliced
  • 2 lbs. small red potatoes, halved and sliced
  • 2 teaspoons salt
  • 3 teaspoons New Mexico red chile powder
  • 1 teaspoon cumin
  • 2 cloves garlic, minced
  • 2 cups water (or beef broth)
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 clove garlic, minced
  • 1 1/2 cups chicken stock
  • 1 1/2 cups milk (room temperature)
  • 1 teaspoon salt
  • 1 cup roasted, peeled, and chopped Hatch green chile
  • 1/2 teaspoon oregano
  • 68 large flour tortillas
  • 1 cup shredded cheddar cheese
  • Sour cream for garnish (optional)

Instructions

  1. Heat a large sauté pan over medium-high heat. Brown the ground beef, then add onions and potatoes. Season with salt, red chile powder, and cumin, stirring to coat evenly. Cook 7-8 minutes until beef is cooked and potatoes soften. Add garlic and cook for 1 minute.
  2. Add 2 cups water or broth, cover, and simmer for 20 minutes. Remove lid and simmer 10 more minutes until liquid evaporates. Set aside.
  3. In a saucepan, melt butter over medium heat. Add flour to make a roux and cook until golden brown (~3 minutes). Add garlic and cook 1 minute more.
  4. Whisk in chicken stock, then add milk, salt, Hatch chiles, and oregano. Simmer for 15 minutes, stirring often, until thickened.
  5. Preheat oven to 350°F (175°C). Place filling in center of each tortilla, fold sides, roll up burrito, and place seam-side down in a greased oven-safe dish.
  6. Smother burritos with sauce and top with shredded cheese. Bake 10-15 minutes until cheese melts and sauce bubbles. Let cool slightly before serving.

Notes

Roasting Hatch green chiles intensifies their flavor — don’t skip it. Let burritos rest a few minutes after baking for best texture and flavor melding.
