- 2 cups cooked and cooled basmati rice
- 3 large eggs
- 2 tbsp oil (preferably sesame or peanut oil)
- 1 small onion, finely chopped
- 1 green chili, finely chopped
- ½ cup spring onions, chopped
- 1 tbsp garlic, minced
- ½ tbsp ginger, minced
- 1 tsp black pepper powder
- 1 tbsp soy sauce
- 1 tbsp red chili sauce
- 1 tsp vinegar
- 1 tsp garam masala
- ½ tsp turmeric powder
- Salt to taste
Instructions
Cook the Eggs 🥚
- Heat 1 tbsp oil in a wok over medium heat.
- Crack the eggs in and scramble them lightly, keeping them soft and fluffy. Remove and set aside.
Sauté the Aromatics 🧄🧅
- In the same pan, add the remaining oil.
- Sauté garlic, ginger, and green chili until fragrant.
- Add chopped onions and stir-fry until translucent.
Add the Rice & Seasonings 🍚
- Add the cooked rice and toss it well.
- Stir in soy sauce, chili sauce, vinegar, turmeric, garam masala, and black pepper powder. Mix thoroughly.
Combine Everything 🔥
- Return the scrambled eggs to the wok and mix everything evenly.
- Sprinkle spring onions on top and give it a final toss.

- Use day-old rice for the best texture.
