Ingredients

  • 2 cups cooked and cooled basmati rice
  • 3 large eggs
  • 2 tbsp oil (preferably sesame or peanut oil)
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped
  • ½ cup spring onions, chopped
  • 1 tbsp garlic, minced
  • ½ tbsp ginger, minced
  • 1 tsp black pepper powder
  • 1 tbsp soy sauce
  • 1 tbsp red chili sauce
  • 1 tsp vinegar
  • 1 tsp garam masala
  • ½ tsp turmeric powder
  • Salt to taste

Instructions

  • Cook the Eggs 🥚

    • Heat 1 tbsp oil in a wok over medium heat.
    • Crack the eggs in and scramble them lightly, keeping them soft and fluffy. Remove and set aside.
  • Sauté the Aromatics 🧄🧅

    • In the same pan, add the remaining oil.
    • Sauté garlic, ginger, and green chili until fragrant.
    • Add chopped onions and stir-fry until translucent.
  • Add the Rice & Seasonings 🍚

    • Add the cooked rice and toss it well.
    • Stir in soy sauce, chili sauce, vinegar, turmeric, garam masala, and black pepper powder. Mix thoroughly.
  • Combine Everything 🔥

    • Return the scrambled eggs to the wok and mix everything evenly.
    • Sprinkle spring onions on top and give it a final toss.
