Instructions

  • Preheat the oven to 425°F (220°C). This helps the crust crisp up perfectly.
  • Prepare the fruit: Peel, core, and thinly slice the apples and pears. In a large bowl, toss the sliced fruit with lemon juice to prevent browning.
  • Make the filling: Add sugar, flour, cinnamon, and nutmeg to the fruit mixture. Stir until the fruit is evenly coated with the dry ingredients.
  • Prepare the pie crust: Unroll one of the Pillsbury pie crusts and press it gently into a 9-inch pie dish. Make sure the crust is smooth against the edges.
  • Assemble the pie: Pour the fruit filling into the prepared pie crust. Dot the filling with small cubes of butter.
  • Top the pie: Unroll the second Pillsbury pie crust and place it over the filled pie. Trim any excess dough, leaving about 1 inch. Crimp the edges together with your fingers or a fork to seal the pie.
  • Create vents: Cut several small slits in the top crust to allow steam to escape while baking.
  • Add egg wash (optional): Whisk together the egg and milk, then brush it over the top of the crust to give it a glossy, golden finish.
  • Bake the pie: Place the pie on a baking sheet and bake for 45-50 minutes at 425°F, or until the crust is golden brown and the filling is bubbling through the vents.
