Description

  • 2 cups cooked and cooled basmati rice
  • 2 tbsp oil (preferably sesame or vegetable oil)
  • 2 eggs, beaten
  • ½ cup onion, finely chopped
  • ½ cup capsicum (bell pepper), finely chopped
  • 2 green chilies, slit
  • 1 tsp ginger-garlic paste
  • 1 tsp soy sauce
  • ½ tsp green chili sauce (optional)
  • ½ tsp white pepper powder
  • 1 tsp black pepper powder
  • 1 tbsp spring onions, chopped
  • Salt to taste

Instructions

  • Prepare the rice: Ensure the rice is cooled and separated to avoid clumping.
  • Scramble the eggs: Heat 1 tbsp oil in a wok or pan. Add the beaten eggs, scramble lightly, and set aside.
  • Sauté aromatics: Add the remaining oil, then sauté onions, green chilies, and ginger-garlic paste until fragrant.
  • Add vegetables & sauces: Stir in the capsicum, followed by soy sauce, chili sauce, white pepper, and black pepper. Mix well.
  • Combine rice and eggs: Add the cooked rice and scrambled eggs. Stir-fry on high heat for 2-3 minutes, ensuring everything is well combined.
  • Garnish & serve: Sprinkle with chopped spring onions and serve hot.

Notes

  • Use day-old rice for the best texture.
  • Adjust spice levels by increasing or reducing green chilies and black pepper.
  • Add a dash of MSG for authentic restaurant-style flavor (optional).
