- 2 cups cooked and cooled basmati rice
- 2 tbsp oil (preferably sesame or vegetable oil)
- 2 eggs, beaten
- ½ cup onion, finely chopped
- ½ cup capsicum (bell pepper), finely chopped
- 2 green chilies, slit
- 1 tsp ginger-garlic paste
- 1 tsp soy sauce
- ½ tsp green chili sauce (optional)
- ½ tsp white pepper powder
- 1 tsp black pepper powder
- 1 tbsp spring onions, chopped
- Salt to taste
Instructions
- Prepare the rice: Ensure the rice is cooled and separated to avoid clumping.
- Scramble the eggs: Heat 1 tbsp oil in a wok or pan. Add the beaten eggs, scramble lightly, and set aside.
- Sauté aromatics: Add the remaining oil, then sauté onions, green chilies, and ginger-garlic paste until fragrant.
- Add vegetables & sauces: Stir in the capsicum, followed by soy sauce, chili sauce, white pepper, and black pepper. Mix well.
- Combine rice and eggs: Add the cooked rice and scrambled eggs. Stir-fry on high heat for 2-3 minutes, ensuring everything is well combined.
- Garnish & serve: Sprinkle with chopped spring onions and serve hot.
Notes
- Use day-old rice for the best texture.
- Adjust spice levels by increasing or reducing green chilies and black pepper.
- Add a dash of MSG for authentic restaurant-style flavor (optional).
