- 1 lb ground turkey (93/7 lean)
- 1 cup fresh cranberries (or 1/2 cup dried)
- 1 cup breadcrumbs (panko or homemade)
- 1 medium onion, finely chopped
- 1 celery stalk, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried sage (or 1 tbsp fresh)
- 1 tsp dried thyme (or 1 tbsp fresh)
- 2 large eggs
- 1/2 cup chicken broth (low sodium)
- 1 tsp salt
- 1/2 tsp black pepper
- Olive oil for drizzling
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment and grease lightly.
- Sauté onion and celery in olive oil 3-4 minutes. Add garlic for last minute. Transfer to a bowl.
- Add ground turkey, cranberries, breadcrumbs, sage, thyme, salt, and pepper. Mix gently.
- Whisk eggs and broth separately. Pour over mixture and fold until just combined.
- Shape into 24 balls (1.5 inches). Place on baking sheet with spacing.
- Bake 18-22 minutes until golden and 165°F internal temperature. Rotate pan halfway.
- Cool 2-3 minutes before serving. Garnish with parsley if desired.
